Oliver Miller: "In America, can get breakfast around the clock."
All-day breakfast with unlimited refills on coffee and excellent service. Those were some of the things Oliver Miller missed the most when he moved to Berlin from New Mexico, USA in 2000. "If you wanted to grab something to eat late at night, there was only döner kebab and bratwurst," says Oliver Miller. But it took another twelve years before he would decide to open his own authentic American diner in the German capital - Nalu Diner in Prenzlauer Berg.

Even though this district of the former East Berlin has grown out of its party-hard reputation over the years – and has seen somewhat of a decline in the demand for 24-hour breakfast joints - Nalu Diner soon became an institution when it opened up. Of course, now it only stays open until 9 p.m.
American Breakfast: Denver omelet with buttermilk pancakes and sausage patties
Serves 4
Ingredients:
For the sausage patties:
- 400 g ground pork1 t bacon fat (optional)
- ½ t salt
- ½ t dried parsley
- ½ t cayenne
- ½ t paprika
- ½ t black pepper
- ½ t dried thyme
- ½ t ground coriander
- ½ t dried sage
- ½ t chili flakes
- Oil for cooking
For the buttermilk pancakes:
- 1 l buttermilk
- 2 eggs
- 30 g melted butter
- 300 g flour
- 20 g baking powder
- 20 g sugar
- 10 g baking soda
- Pinch of salt
- Oil for cooking
- Butter and maple syrup for topping
For the Denver omelet:
- 12 eggs
- 120 g bell peppers (red, green, yellow)
- 120 g ham
- 180 g shredded cheddar cheese
- Salt and pepper
- Oil or butter for cooking
Preparation:
Mix together spices and ground pork. Form little balls. Heat the pan. Add oil and flatten the sausage patties into the pan. Cook patties on each side until they are brown and crispy. Keep patties warm until served.
Mix all wet ingredients for the pancakes in a bowl. In another bowl, mix all dry ingredients. Add wet mixture to dry and stir together. Be careful not to over-mix batter. Batter should look a bit lumpy. Add oil to a pan. Put one part of batter into a pan and cook on medium-low heat. Cook until tops of pancakes are covered with tiny bubbles and batter is set, about four to six minutes. Flip pancakes and cook until undersides are golden brown, about four minutes more. Keep pancakes warm until served.
Heat pan and add some oil or butter. Once it has melted, tilt pan to fully coat bottom with butter or oil. Add one part of bell pepper and ham and cook for 30 to 60 seconds, stirring frequently. Turn heat to medium-low. In the meantime, pour eggs into a bowl, mix, and add salt and pepper to taste.
Add one part of mixed eggs to pan with ham and bell pepper, and cook for one minute. Add cheese and cook the Denver omelet for 30 seconds until cooked through.
Plate Denver omelet and pancake together with sausage patties. Top pancake with butter and maple syrup.
