A Spanish farmer has teamed up with a migratory bird expert to make foie gras without using the controversial force-feeding method. Instead of farming domesticated geese, they make foie gras from wild geese which touch down in Spain to gorge themselves on acorns and olives, before flying south for the winter. It's a more ethical, sustainable version of the European delicacy.
